Ingredients
  

  • 4 cups diced potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 lb ground beef or chicken
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup corn
  • 1 cup black beans drained
  • 1 cup diced tomatoes
  • ½ cup diced red onion
  • ¼ cup chopped cilantro
  • ½ cup sour cream
  • 2 tablespoons lime juice
  • ½ teaspoon garlic powder

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Toss diced potatoes with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  • Spread the potatoes on a baking sheet and roast for 25 to 30 minutes, flipping halfway, until crispy.
  • Cook ground beef or chicken in a skillet over medium heat until browned.
  • Add taco seasoning and a splash of water to the meat, then simmer for a few minutes.
  • In a mixing bowl, combine sour cream, lime juice, and garlic powder until smooth.
  • Assemble the bowls by adding crispy potatoes, then top with seasoned meat, cheese, corn, black beans, tomatoes, and red onion.
  • Drizzle the creamy sauce over the bowls and sprinkle chopped cilantro on top.
  • Serve warm and enjoy.
