Ingredients
  

  • 8 oz tortilla chips
  • 2 cups shredded cheddar-jack or Mexican blend cheese
  • ½ lb ground beef
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons water
  • ½ cup black beans drained
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • ¼ cup sliced red onions
  • ½ cup sour cream
  • ½ cup guacamole
  • 2 tablespoons chopped cilantro

Instructions
 

  • Heat a skillet over medium heat and cook the ground beef until browned.
  • Season beef with chili powder, cumin, paprika, garlic powder, salt, and pepper.
  • Add water and simmer for 2 to 3 minutes, then set aside.
  • Preheat oven to 400°F (200°C).
  • Spread tortilla chips evenly on a large oven-safe plate or tray.
  • Distribute cooked beef, black beans, corn, and shredded cheese evenly over chips.
  • Bake for 8 to 10 minutes until cheese is melted and bubbly.
  • Remove from oven and top with diced tomatoes, jalapeños, and red onions.
  • Drizzle sour cream and guacamole on top.
  • Sprinkle chopped cilantro to finish and serve immediately.

Notes

  • Toast chips 3 minutes before topping for extra crispiness.
  • Add chipotle sauce or hot salsa to increase spiciness.
  • Substitute shredded chicken instead of beef for variation.
  • Make vegetarian by doubling beans and corn and omitting meat.
  • Mix mozzarella with cheddar for a gooey cheese pull.
