Ingredients
  

  • 1 lb firm cheese cheddar, gouda, mozzarella, or a mix, cut into bite-size cubes
  • 3.5 to 5 oz salami slices cut into strips or small pieces
  • 1 cup green olives pitted and halved
  • ½ red bell pepper diced (optional)
  • ½ small red onion thinly sliced (optional)
  • 2 to 3 tablespoons fresh parsley or basil chopped
  • ½ cup extra-virgin olive oil
  • 2 to 3 tablespoons red wine vinegar or white wine vinegar
  • 1 to 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil or Italian seasoning
  • ¼ teaspoon crushed red pepper flakes optional
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Cut the cheese into bite-size cubes and place them in a large bowl or airtight container.
  • Add the salami pieces, green olives, diced red bell pepper, sliced red onion, and chopped fresh herbs to the cheese.
  • In a small bowl, whisk together the olive oil, vinegar, minced garlic, dried oregano, dried basil, red pepper flakes if using, salt, and pepper until well blended.
  • Pour the marinade over the cheese and add-ins, then gently toss with a spoon or spatula until everything is coated.
  • Cover and refrigerate for at least 30 minutes to 2 hours to allow flavors to meld and cheese to absorb the marinade.
  • Remove from the fridge 10 to 15 minutes before serving to take the chill off.
  • Arrange on a platter with toothpicks or small forks, and serve with crackers, crusty bread, or as part of a charcuterie board.
