1 baking sheet lined or lightly greased
1 large mixing bowl for tossing Brussels sprouts
1 small bowl for whisking glaze
- 1 lb Brussels sprouts trimmed and halved
- 2 –3 tbsp olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 2 tbsp white miso paste
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 tsp rice vinegar optional
- 1 –2 garlic cloves minced
- 1 tsp grated fresh ginger optional
- 1 –2 tsp sesame seeds
Preheat the oven to 425 °F and prepare a baking sheet by lining it or lightly greasing.
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
Arrange the sprouts cut-side down on the baking sheet in a single layer and roast for 15–20 minutes until golden and crisp around the edges.
While the sprouts roast, whisk together the miso paste, soy sauce, sesame oil, honey or maple syrup, rice vinegar (if using), garlic, and ginger in a small bowl until smooth.
Remove the roasted Brussels sprouts from the oven and drizzle or brush the miso-sesame glaze over them, tossing gently to coat evenly.
Sprinkle with sesame seeds and serve warm.
