Equipment

Ingredients
  

  • 1 lb Brussels sprouts trimmed and halved
  • 2 –3 tbsp olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp rice vinegar optional
  • 1 –2 garlic cloves minced
  • 1 tsp grated fresh ginger optional
  • 1 –2 tsp sesame seeds

Instructions
 

  • Preheat the oven to 425 °F and prepare a baking sheet by lining it or lightly greasing.
  • In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  • Arrange the sprouts cut-side down on the baking sheet in a single layer and roast for 15–20 minutes until golden and crisp around the edges.
  • While the sprouts roast, whisk together the miso paste, soy sauce, sesame oil, honey or maple syrup, rice vinegar (if using), garlic, and ginger in a small bowl until smooth.
  • Remove the roasted Brussels sprouts from the oven and drizzle or brush the miso-sesame glaze over them, tossing gently to coat evenly.
  • Sprinkle with sesame seeds and serve warm.

  • Spread sprouts in a single layer for crispiness.
  • Adjust honey or maple syrup to desired sweetness.
  • Add a squeeze of fresh lemon or lime for brightness.
  • Pairs well with grilled meats, tofu, or rice bowls.
