1 parchment-lined tray for chilling truffles

- 1/2 cup cream cheese softened
- 1 to 2 tbsp Biscoff spread
- 1 1/2 to 2 cups chocolate chips milk, dark, or white
- Optional: crushed cookies drizzle of Biscoff spread, sea salt for topping
Combine crushed Biscoff cookies, softened cream cheese, and Biscoff spread in a bowl until a sticky, dough-like consistency forms.
Roll tablespoon-sized portions into small balls and place on a parchment-lined tray. Chill in the refrigerator for 15 to 20 minutes until firm.
Melt the chocolate chips in a microwave-safe bowl or double boiler until smooth.
Dip each chilled cookie ball into the melted chocolate using a fork or toothpick, ensuring they are fully coated. Let excess chocolate drip off and place back on the parchment.
Before the chocolate sets, sprinkle with crushed cookies, drizzle with Biscoff spread, or add a pinch of sea salt as desired.
