Ingredients
  

  • 1 lb smoked sausage sliced
  • 1 tablespoon olive oil
  • ½ onion diced
  • 2 cloves garlic minced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup milk or light cream
  • 1 cup shredded cheddar cheese
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: ½ cup diced bell peppers
  • Optional: ½ cup peas or corn

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced sausage and cook until browned, then remove and set aside.
  • In the same pot, sauté diced onion for 2 to 3 minutes until softened.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Stir in uncooked white rice.
  • Pour in chicken broth and milk, then add paprika, Italian seasoning, salt, and pepper.
  • Bring mixture to a boil, then reduce heat to low, cover, and simmer for 18 to 20 minutes until rice is tender.
  • Stir in shredded cheddar cheese until melted and creamy.
  • Return browned sausage to the pot and mix well.
  • Let the dish sit for a few minutes to thicken before serving warm.

  • Stir occasionally during cooking to prevent sticking.
  • Use spicy sausage to add heat and extra flavor.
