Ingredients
  

  • 8 bone-in skin-on chicken thighs
  • salt to taste
  • freshly ground black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 3 to 4 tablespoons olive oil or melted butter
  • ½ cup grated Parmesan cheese
  • 1 to 2 garlic cloves minced
  • optional: chopped fresh parsley or basil for garnish

Instructions
 

  • Pat chicken thighs dry with paper towels and season both sides generously with salt, pepper, garlic powder, and Italian seasoning.
  • Preheat oven to 400°F. Heat olive oil or melted butter in a large oven-safe skillet over medium-high heat.
  • Place chicken thighs skin-side down in the hot skillet. Sear 5 to 7 minutes until skin is golden and crisp. Flip and cook 2 to 3 minutes more.
  • Sprinkle grated Parmesan cheese evenly over the chicken and scatter the minced garlic around.
  • Transfer skillet to the oven and bake for 15 to 20 minutes until chicken is cooked through and cheese crust is golden.
  • Remove from oven and let rest a few minutes. Garnish with fresh parsley or basil if desired before serving.

Notes

  • For extra crispy skin, broil for 1-2 minutes at the end while watching carefully.
  • Add lemon juice or red pepper flakes for a flavor boost.
  • Serve with roasted vegetables, mashed potatoes, or salad.
  • A blend of Parmesan and Pecorino cheese adds richer taste.
