1 oven-safe skillet large
1 oven preheated to 400°F
1 paper towels for drying chicken
- 8 bone-in skin-on chicken thighs
- salt to taste
- freshly ground black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- 3 to 4 tablespoons olive oil or melted butter
- ½ cup grated Parmesan cheese
- 1 to 2 garlic cloves minced
- optional: chopped fresh parsley or basil for garnish
Pat chicken thighs dry with paper towels and season both sides generously with salt, pepper, garlic powder, and Italian seasoning.
Preheat oven to 400°F. Heat olive oil or melted butter in a large oven-safe skillet over medium-high heat.
Place chicken thighs skin-side down in the hot skillet. Sear 5 to 7 minutes until skin is golden and crisp. Flip and cook 2 to 3 minutes more.
Sprinkle grated Parmesan cheese evenly over the chicken and scatter the minced garlic around.
Transfer skillet to the oven and bake for 15 to 20 minutes until chicken is cooked through and cheese crust is golden.
Remove from oven and let rest a few minutes. Garnish with fresh parsley or basil if desired before serving.
- For extra crispy skin, broil for 1-2 minutes at the end while watching carefully.
- Add lemon juice or red pepper flakes for a flavor boost.
- Serve with roasted vegetables, mashed potatoes, or salad.
- A blend of Parmesan and Pecorino cheese adds richer taste.
