Ingredients
  

  • 1 cup creamy peanut butter
  • ½ cup softened butter
  • ½ cup powdered sugar plus extra for coating
  • 1 teaspoon vanilla extract
  • 2 cups crisp rice cereal or finely crushed graham crackers
  • Optional: mini chocolate chips or chopped peanuts

Instructions
 

  • Beat peanut butter and softened butter together in a large bowl until smooth.
  • Add powdered sugar and vanilla extract, and mix until well combined.
  • Stir in crisp rice cereal or crushed graham crackers until mixture holds together but remains slightly crumbly.
  • Roll tablespoon-sized portions into balls using clean hands and place on a parchment-lined tray.
  • Roll each ball in powdered sugar to coat completely for a snowy appearance.
  • Refrigerate for at least 30 minutes until firm.
  • Serve chilled or at room temperature.

  • Add mini chocolate chips for extra sweetness.
