Ingredients
  

  • 1 lb ground beef
  • Salt and freshly ground black pepper to taste
  • 1 tsp garlic powder optional
  • 1 tsp onion powder optional
  • 8 small flour tortillas
  • 2 to 3 cups shredded cheddar and Monterey Jack cheese blend
  • Optional add-ins: diced onions pickles, ketchup, mustard, diced tomatoes
  • Butter or oil for grilling

Instructions
 

  • Cook the ground beef in a skillet over medium heat, breaking it up with a spoon until browned.
  • Season the beef with salt, pepper, garlic powder, and onion powder, then drain any excess fat.
  • Lay out 4 tortillas and sprinkle each with a layer of shredded cheese.
  • Distribute the cooked beef evenly over the cheese on each tortilla.
  • Add any optional toppings like diced onions or pickles over the beef.
  • Top each with more shredded cheese and place another tortilla on top to form a quesadilla.
  • Heat a skillet or griddle over medium heat and lightly butter or oil the surface.
  • Grill each assembled quesadilla for 2 to 3 minutes per side, pressing gently, until cheese melts and tortillas are golden and crisp.
  • Cut the quesadillas into wedges and serve warm with ketchup, mustard, or your favorite burger sauces.

Notes

  • Use a cheddar and Monterey Jack blend for best melting.
  • Try ranch, chipotle mayo, or burger sauce for extra flavor.
