Ingredients
  

  • 1.1 lb ripe tomatoes cherry, plum, or mixed, halved
  • 2-3 tbsp olive oil
  • 2-3 garlic cloves minced
  • 1-2 tsp balsamic vinegar optional
  • Salt and freshly ground black pepper to taste
  • 1 ball burrata cheese
  • Fresh basil leaves
  • Crusty bread for serving optional

Instructions
 

  • Preheat the oven to 400 °F (200 °C).
  • In a baking dish, toss halved tomatoes with olive oil, minced garlic, balsamic vinegar if using, salt, and pepper until evenly coated.
  • Roast the tomatoes for 20 to 25 minutes until soft and caramelized at the edges.
  • Remove from oven and let the tomatoes cool slightly before transferring them to a serving platter or bowl.
  • Place the burrata in the center or on top of the warm roasted tomatoes.
  • Drizzle with extra olive oil, scatter fresh basil leaves on top, and serve warm, optionally with crusty bread.

Notes

  • Use a mix of cherry and plum tomatoes for better texture and flavor contrast.
  • Allow burrata to reach room temperature for creaminess.
  • Sprinkle flaky sea salt or drizzle balsamic glaze for extra richness.
