Ingredients
  

  • 1 lb sausage smoked, Italian, or favorite, sliced or crumbled
  • 1 tablespoon olive oil if needed
  • 1 small onion finely chopped
  • 2-3 garlic cloves minced
  • 1 can 14 oz Rotel diced tomatoes with green chiles, undrained
  • 8 oz cream cheese cubed
  • ½ teaspoon black pepper
  • ½ teaspoon salt to taste
  • Optional: ½ teaspoon chili powder or paprika
  • Optional garnish: chopped green onions or cilantro

Instructions
 

  • Heat a large skillet over medium heat.
  • Add sausage and cook until browned and cooked through, breaking up crumbly sausage as it cooks, about 6–8 minutes.
  • Remove excess grease if desired.
  • Add chopped onion to the skillet and sauté until softened, about 3–4 minutes.
  • Stir in minced garlic and cook until fragrant, 30–60 seconds.
  • Pour in undrained Rotel diced tomatoes and stir to combine.
  • Add cream cheese cubes, black pepper, salt, and optional spices; stir gently until cream cheese melts into a creamy sauce.
  • Let mixture simmer for 3–5 minutes until heated through and well blended.
  • Serve warm with tortilla chips as a dip, over rice or pasta, or with crusty bread.

  • Adjust spice by using mild, original, or hot diced tomatoes.
  • Boost flavor with jalapeños or hot sauce additions.
  • Add shredded cheddar or Monterey Jack for extra richness.
