Ingredients
  

  • 1 lb sausage Italian, smoked, or preferred, sliced
  • 2 lb potatoes diced bite-sized
  • 1 medium onion chopped
  • 2 –3 garlic cloves minced
  • 1 cup chicken broth
  • 1 tsp dried thyme or Italian seasoning
  • Salt and freshly ground black pepper to taste
  • Optional: 1–2 cups mixed vegetables carrots, peas, bell peppers
  • Optional garnish: fresh parsley

Instructions
 

  • Place diced potatoes, chopped onion, and minced garlic into the slow cooker.
  • Add sliced sausage on top of the vegetables.
  • Season with dried thyme or Italian seasoning, salt, and pepper.
  • Pour chicken broth around the edges of the slow cooker.
  • Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours, until potatoes are tender.
  • Stir gently, garnish with fresh parsley if desired, and serve warm.

  • Use spicy sausage for a flavor kick or smoked sausage for richness.
  • Add mixed vegetables for extra color and nutrients.
  • Substitute chicken broth with vegetable broth or white wine for depth.
