Ingredients
  

  • 2 lbs potatoes diced
  • 1 lb smoked sausage sliced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese cubed
  • ½ cup chicken broth
  • ¼ cup sour cream
  • 1 teaspoon paprika
  • ½ teaspoon Cajun seasoning optional
  • Salt and black pepper to taste
  • ½ cup bell peppers diced (optional)
  • ½ cup green onions sliced (optional)
  • Bacon bits optional

Instructions
 

  • Dice the potatoes evenly and slice the smoked sausage; chop the onion and mince the garlic.
  • Add potatoes, sausage, onion, garlic, and optional bell peppers into the slow cooker.
  • Pour in chicken broth and season with paprika, Cajun seasoning, salt, and black pepper.
  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until potatoes are tender.
  • Stir in cream cheese, shredded cheddar, and sour cream until melted and creamy.
  • Let the mixture sit for 5-10 minutes to thicken before serving.
  • Garnish with sliced green onions or bacon bits if desired.
