Ingredients
  

  • 1 large bag sturdy tortilla chips
  • 1 lb ground beef about 450 g
  • 10 –14 oz peeled and deveined shrimp about 300–400 g
  • 1 –2 teaspoons taco seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • –2 cups shredded cheddar and Monterey Jack or Mexican blend cheese
  • 1 medium tomato diced
  • ¼ cup red onion finely chopped
  • Sliced jalapeños fresh or pickled (optional)
  • Fresh cilantro or parsley chopped
  • Sour cream for serving
  • Lime wedges for serving

Instructions
 

  • Brown the ground beef in a large skillet over medium-high heat.
  • Season the beef with taco seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
  • Drain excess fat and set the cooked beef aside.
  • In the same skillet or a separate pan, heat a small amount of oil over medium heat.
  • Add seasoned shrimp and cook for 2 to 4 minutes until pink and cooked through, then remove from heat.
  • Arrange tortilla chips evenly on a large baking sheet or oven-safe platter.
  • Layer the seasoned ground beef and cooked shrimp over the chips.
  • Sprinkle shredded cheese generously over the toppings.
  • Melt the cheese under a hot broiler or in a 400 °F (200 °C) oven for 5 to 8 minutes until bubbly.
  • Remove the nachos from the oven and add diced tomato, chopped red onion, and sliced jalapeños if using.
  • Garnish with fresh cilantro or parsley.
  • Drizzle or dollop sour cream on top and serve immediately with lime wedges.

Notes

  • Use cooked sausage, pulled pork, or chicken as protein alternatives.
  • Pepper jack cheese adds a spicy kick to the dish.
  • Adjust heat by adding jalapeños or cayenne pepper to taste.
  • Best served immediately to keep chips crispy.
