- 10 to 14 oz egg noodles ramen, or preferred noodles
- 2 to 3 tablespoons vegetable or sesame oil
- 1 lb chicken breast or thighs thinly sliced
- Salt and freshly ground black pepper to taste
- 4 to 5 garlic cloves minced
- ½ cup soy sauce
- 2 to 3 tablespoons honey or brown sugar
- 1 to 2 tablespoons rice vinegar or lime juice
- 1 to 2 teaspoons grated fresh ginger optional
- 1 to 2 teaspoons chili paste or sriracha optional
- Optional garnish: sliced green onions sesame seeds
Cook noodles according to package instructions; drain and set aside.
Heat oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper.
Add chicken to skillet and cook until browned and cooked through. Remove chicken and set aside.
Add more oil if needed, then sauté garlic and ginger if using until fragrant, about 30 seconds.
Stir in soy sauce, honey or brown sugar, rice vinegar or lime juice, and chili paste or sriracha if desired. Simmer for 1 to 2 minutes until sauce thickens.
Return chicken to skillet and add noodles; toss to coat everything evenly with the garlic sauce.
Garnish with sliced green onions and sesame seeds if desired. Serve warm.
