- 2 chicken breasts diced
- 1 tablespoon oil
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon garlic minced
- 1 teaspoon ginger grated
- 3 cups cooked rice preferably day-old
- 2 eggs beaten
- 1 cup mixed vegetables peas, carrots, corn
- 2 tablespoons soy sauce
- 1 tablespoon oil
- Green onions chopped, for garnish
- Sesame seeds for garnish
Heat 1 tablespoon of oil in a pan over medium-high heat and cook the diced chicken breasts until browned, about 5 to 7 minutes.
In a bowl, mix soy sauce, honey or brown sugar, rice vinegar, minced garlic, and grated ginger to make teriyaki sauce.
Pour the teriyaki sauce over the chicken in the pan and simmer for 2 to 3 minutes until the sauce thickens and becomes glossy. Remove chicken from pan and set aside.
In the same pan, heat 1 tablespoon of oil, scramble the beaten eggs, then add mixed vegetables and cook for 2 to 3 minutes.
Add the cooked rice and 2 tablespoons of soy sauce to the pan and stir well. Cook for about 5 minutes, stirring frequently.
Divide the fried rice into serving bowls, top with teriyaki chicken, and garnish with chopped green onions and sesame seeds.
