Equipment

  • 1 bowl for mixing teriyaki sauce

Ingredients
  

  • 2 chicken breasts diced
  • 1 tablespoon oil
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated
  • 3 cups cooked rice preferably day-old
  • 2 eggs beaten
  • 1 cup mixed vegetables peas, carrots, corn
  • 2 tablespoons soy sauce
  • 1 tablespoon oil
  • Green onions chopped, for garnish
  • Sesame seeds for garnish

Instructions
 

  • Heat 1 tablespoon of oil in a pan over medium-high heat and cook the diced chicken breasts until browned, about 5 to 7 minutes.
  • In a bowl, mix soy sauce, honey or brown sugar, rice vinegar, minced garlic, and grated ginger to make teriyaki sauce.
  • Pour the teriyaki sauce over the chicken in the pan and simmer for 2 to 3 minutes until the sauce thickens and becomes glossy. Remove chicken from pan and set aside.
  • In the same pan, heat 1 tablespoon of oil, scramble the beaten eggs, then add mixed vegetables and cook for 2 to 3 minutes.
  • Add the cooked rice and 2 tablespoons of soy sauce to the pan and stir well. Cook for about 5 minutes, stirring frequently.
  • Divide the fried rice into serving bowls, top with teriyaki chicken, and garnish with chopped green onions and sesame seeds.

Notes

  • Use cold, day-old rice for best texture.
  • Add a splash of sesame oil for extra flavor.
  • Include broccoli or snap peas for variety.
