Ingredients
  

  • 4 slices bread white, whole-wheat, or multigrain
  • 1/4 cup mayonnaise regular or vegan
  • 1/4 cup grated carrot
  • 1/4 cup finely chopped bell pepper any color
  • 1/4 cup shredded cabbage or lettuce or mixed
  • Optional: cucumber sweet corn, grated potato, chopped onion, boiled peas, as desired
  • Salt to taste
  • Freshly ground black pepper or pepper powder to taste
  • Butter or butter-like spread for bread (optional)

Instructions
 

  • In a bowl, mix the mayonnaise, grated carrot, chopped bell pepper, shredded cabbage, and any optional vegetables. Season with salt and pepper and stir well.
  • Optionally, lightly butter both sides of each bread slice to add flavor and prevent sogginess.
  • Spread a generous layer of the mayo-vegetable mixture over one slice of bread and top it with another slice.
  • If preferred, grill or toast the sandwich using a sandwich maker or hot pan until golden brown and crispy.
  • Cut the sandwich diagonally or as desired and serve immediately.
