Ingredients
  

  • 4 cups watermelon cubed
  • 1 large cucumber sliced or diced
  • ¾ cup crumbled feta cheese
  • ¼ cup fresh mint leaves torn
  • 2 tbsp thinly sliced red onion optional
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon or lime juice
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Whisk together olive oil, lemon or lime juice, salt, and pepper in a small bowl to prepare the dressing.
  • Gently combine watermelon, cucumber, and red onion (if using) in a large bowl.
  • Sprinkle crumbled feta and torn mint leaves over the salad.
  • Drizzle the dressing over the salad and toss gently to coat without breaking the fruit.
  • Serve immediately or chill briefly before serving for extra refreshment.
