Ingredients
  

  • 4 cups watermelon cubes
  • 1 cup cucumber sliced or diced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves torn
  • 2 –3 cups mixed greens optional
  • 2 –3 tbsp thinly sliced red onion optional
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp lime or lemon juice
  • 1 tsp honey or agave optional
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Whisk olive oil, lime or lemon juice, honey (if using), salt, and pepper together in a small bowl to prepare the dressing.
  • In a large bowl, combine watermelon cubes, cucumber, mixed greens if using, and red onion.
  • Sprinkle crumbled feta cheese and torn mint leaves over the salad.
  • Drizzle the dressing over the salad and gently toss to combine all ingredients.
  • Serve the salad immediately to enjoy its fresh crunch and vibrant flavors.
