Ingredients
  

  • 1 cup ricotta cheese
  • 2 to 3 tablespoons olive oil plus extra for drizzling
  • 1 clove garlic minced (optional)
  • Salt and freshly ground black pepper to taste
  • 1 to 2 cups fresh tomatoes diced
  • 1 to 2 tablespoons fresh basil or parsley chopped
  • 1 baguette or crusty bread sliced and toasted
  • Balsamic glaze for drizzling optional

Instructions
 

  • Combine ricotta, 1 to 2 tablespoons olive oil, minced garlic if using, salt, and pepper in a bowl. Whip until smooth and fluffy.
  • Toss diced tomatoes with a drizzle of olive oil, salt, pepper, and chopped basil or parsley in a separate bowl.
  • Toast the bread slices until golden and crisp; optionally brush with olive oil before toasting.
  • Spread whipped ricotta generously over each toast slice.
  • Top the ricotta with the fresh tomato mixture.
  • Drizzle with olive oil and balsamic glaze if desired. Serve immediately.

Notes

  • Mix Parmesan or goat cheese with ricotta for extra tang.
  • Rub toasted bread with cut garlic clove for added flavor.
  • Try oregano, thyme, or chives instead of basil.
  • Serve with olives, cured meats, or a green salad.
