This Lime Mousse Cheesecake is a refreshing, tangy dessert with a creamy, light texture. The combination of a zesty lime flavor and smooth cheesecake makes it the perfect treat for any occasion. It’s a no-bake cheesecake that’s both easy to make and utterly delicious!

Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Lime Mousse Filling:

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • ½ cup fresh lime juice (about 3-4 limes)
  • Zest of 2 limes
  • 1 teaspoon vanilla extract
  • 1 packet (1/4 oz) unflavored gelatin
  • 2 tablespoons water
  • ¼ cup granulated sugar

For the Topping (optional):

  • Lime slices or zest for garnish
  • Whipped cream

Instructions

Step 1: Prepare the Crust
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the mousse filling.

Step 2: Dissolve the Gelatin
In a small bowl, sprinkle the gelatin over 2 tablespoons of water. Let it sit for about 5 minutes to bloom. After the gelatin has absorbed the water, gently heat it in the microwave for about 15-20 seconds, or until it becomes liquid. Stir and set aside.

Step 3: Make the Lime Mousse Filling
In a large bowl, beat the softened cream cheese with powdered sugar until smooth and creamy. Add the lime juice, lime zest, and vanilla extract, and mix until combined. In a separate bowl, whip the heavy cream until stiff peaks form.

Step 4: Combine the Gelatin and Mousse
Slowly add the melted gelatin into the cream cheese mixture, mixing well. Then, gently fold in the whipped cream until smooth and fully incorporated. Be careful not to deflate the whipped cream.

Step 5: Assemble the Cheesecake
Pour the lime mousse filling over the chilled graham cracker crust. Smooth the top with a spatula and refrigerate for at least 4 hours, or overnight, to allow the mousse to set.

Step 6: Serve & Garnish
Before serving, garnish with lime slices or zest and a dollop of whipped cream, if desired. Slice and serve chilled.

This Lime Mousse Cheesecake is light, creamy, and bursting with fresh lime flavor—perfect for a sweet and tangy dessert! Enjoy!
