Ingredients:

For the Apple Mixture:

  • 2 large apples, peeled and chopped
  • 2 tbsp sugar
  • 1 tsp ground cinnamon

For the Bread Batter:

  • 2/3 cup sugar
  • 2 large eggs

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper, allowing some overhang for easy removal.
  2. Prepare Apple Mixture:
    • In a small bowl, toss the chopped apples with 2 tbsp sugar and 1 tsp cinnamon. Set aside.
  3. Make the Bread Batter:
    • In a large bowl, cream together the softened butter and 2/3 cup sugar until light and fluffy.
    • Beat in the eggs, one at a time, followed by the vanilla extract.
    • In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until just combined.
  4. Layer the Bread:
    • Pour half of the batter into the prepared loaf pan, spreading it evenly.
    • Top with half of the apple mixture, then sprinkle half of the brown sugar-cinnamon mixture over the apples.
    • Repeat the layers with the remaining batter, apples, and cinnamon-sugar.
  5. Bake:
    • Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover loosely with aluminum foil during the last 15 minutes.
  6. Prepare the Glaze:
    • While the bread cools, whisk together the powdered sugar and milk to make a smooth glaze.
  7. Glaze the Bread:
    • Once the bread has cooled slightly, drizzle the glaze over the top. Let the bread cool completely before slicing and serving.
