Mississippi Mud Potatoes are a cheesy, creamy, and bacon-loaded potato dish that’s perfect for potlucks, family gatherings, or a comforting side dish. This dish is similar to loaded baked potatoes but with a rich, gooey texture that makes it irresistible!

Ingredients:

  • 4 large russet potatoes, peeled and diced
  • 6 slices bacon, cooked and crumbled
  • 1 small onion, finely chopped
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup heavy cream (or milk)
  • 4 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 green onions, sliced (for garnish)

Instructions:

Step 1: Preheat & Prepare

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish with butter or cooking spray.

Step 2: Cook the Potatoes

  • Bring a large pot of salted water to a boil.
  • Add diced potatoes and cook for about 10 minutes, just until slightly tender (do not overcook).
  • Drain and set aside.

Step 3: Mix the Ingredients

  • In a large bowl, combine sour cream, heavy cream, melted butter, garlic powder, smoked paprika, salt, and black pepper.
  • Stir in cheddar cheese, mozzarella cheese, chopped onion, and crumbled bacon.
  • Add the parboiled potatoes and mix gently until everything is well coated.

Step 4: Bake to Perfection

  • Transfer the mixture to the greased baking dish.
  • Cover with foil and bake for 25 minutes.
  • Remove foil, sprinkle extra cheese on top, and bake uncovered for another 10-15 minutes until golden and bubbly.

Step 5: Serve & Enjoy

  • Garnish with sliced green onions and extra bacon if desired.
  • Serve hot as a side dish with steak, chicken, or barbecue!
