Ingredients:

  • 1 cup fresh spinach, finely chopped
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Panko or Italian-style)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • Oil for frying (vegetable or canola)

Instructions:

Step 1: Prepare the Filling

  1. In a bowl, mix chopped spinach, shredded mozzarella, Parmesan, garlic powder, and Italian seasoning.
  2. Shape the mixture into small stick-like forms and place them on a tray.
  3. Freeze for at least 30-60 minutes to help them hold their shape.

Step 2: Prepare the Breading Station

  1. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt, pepper, and red pepper flakes.

Step 3: Coat the Mozzarella Sticks

  1. Take the frozen spinach-mozzarella sticks and coat each one in flour, then dip in the egg mixture, and finally coat with breadcrumbs.
  2. For extra crispiness, repeat the egg and breadcrumb coating a second time.
  3. Return them to the freezer for another 10-15 minutes to firm up.

Step 4: Fry to Perfection

  1. Heat oil in a deep pan to 350°F (175°C).
  2. Fry the sticks in batches for 2-3 minutes until golden brown and crispy.
  3. Transfer to a paper towel-lined plate to drain excess oil.

Step 5: Serve & Enjoy

  • Serve warm with marinara sauce, ranch, or garlic aioli for dipping.

These Spinach Mozzarella Sticks are crunchy on the outside, gooey on the inside, and full of flavor!
