Ingredients
  

  • 1 cup cottage cheese
  • 4 large eggs
  • ½ cup milk
  • ½ cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons butter for the pan
  • Fresh berries optional

Instructions
 

  • Preheat the oven to 375°F (190°C) and place butter in an 8×8 inch baking dish to melt while the oven heats.
  • In a bowl, whisk together eggs, milk, cottage cheese, sugar, and vanilla extract until combined.
  • In a separate bowl, mix the flour, salt, and baking powder thoroughly.
  • Combine wet and dry ingredients gently until smooth, taking care not to overmix.
  • Remove the hot baking dish from the oven carefully, pour in the batter, and return to the oven.
  • Bake for 25 to 30 minutes, or until the pancakes are puffed and golden brown.
  • Slice into squares and serve warm with optional toppings like fresh berries, maple syrup, or powdered sugar.
