diced or sliced

large leek
white and light green parts, cleaned and sliced

olive oil or butter

grated Parmesan cheese

paprika

chopped (for garnish)
Instructions
Rinse and dry the diced or sliced potatoes completely to remove excess starch and ensure crispiness.
Heat olive oil or butter in a large skillet over medium-high heat.
Add potatoes in a single layer and cook for 15 to 20 minutes, turning occasionally until golden brown and tender inside.
Reduce heat to medium and add sliced leeks and minced garlic to the skillet.
Cook for 4 to 5 minutes until leeks are soft and slightly caramelized.
Season with salt, black pepper, and paprika if desired.
Sprinkle grated Parmesan over the potatoes and toss gently until cheese melts and coats evenly.
Remove from heat and garnish with fresh chopped parsley before serving.
Notes
Do not overcrowd the pan to keep potatoes crispy.
Combine butter and olive oil for richer flavor.
Add lemon juice for a fresh brightness.
