Ingredients
  

  • 4 medium potatoes diced or sliced
  • 1 large leek white and light green parts, cleaned and sliced
  • 2 tablespoons olive oil or butter
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • ½ teaspoon paprika optional
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Rinse and dry the diced or sliced potatoes completely to remove excess starch and ensure crispiness.
  • Heat olive oil or butter in a large skillet over medium-high heat.
  • Add potatoes in a single layer and cook for 15 to 20 minutes, turning occasionally until golden brown and tender inside.
  • Reduce heat to medium and add sliced leeks and minced garlic to the skillet.
  • Cook for 4 to 5 minutes until leeks are soft and slightly caramelized.
  • Season with salt, black pepper, and paprika if desired.
  • Sprinkle grated Parmesan over the potatoes and toss gently until cheese melts and coats evenly.
  • Remove from heat and garnish with fresh chopped parsley before serving.

Notes

  • Do not overcrowd the pan to keep potatoes crispy.
  • Combine butter and olive oil for richer flavor.
  • Add lemon juice for a fresh brightness.
